In Penang cuisine, dried, shredded nutmeg rind with sugar coating is used as toppings on the uniquely Penang ais kacang. Nutmeg rind is also blended or boiled to make iced nutmeg juice. In Kerala Malabar region of India, it is used for juice, pickles and chutney. The English and the Dutch battled over Indonesia’s nutmeg-growing islands in the 1600s.
The cinnamon comes from another supplier in Ecuador, Negasmart. Therefore, McCormick cinnamon most probably is cassia and not Ceylon cinnamon. Because we cannot see for ourselves how these animals live and what they endure does not mean it isn’t happening. Cinnamon production is moderately sustainable since there is no known significant damage to air, water, land, soil, forests, etc. as long as pesticides have not been used. Be sure to buy non GMO/organic, as toxic, chemical pesticides contaminate air, water, soil, etc. when using regenerative practices. Following ingestion of a food allergen, a person with food allergies can experience a severe, life-threatening allergic reaction called anaphylaxis.



Young leaves are lovely with a pink hue at emergence, gradually turning a dark green. The tree bears clusters of small star-shaped flowers in the spring, becoming small, dark purple fruit. The fruit actually smells like cinnamon, cassia v cinnamon but the spice is actually made from the bark of the tree. Zeylanicum thrives in USDA zones 9-11 and can survive frosts down to 32 degrees F. Ceylon cinnamon sticks have many thin layers and can easily be made into powder using a coffee or spice grinder, whereas cassia sticks are much harder. Indonesian cinnamon is often sold in neat quills made up of one thick layer, capable of damaging a spice or coffee grinder. Saigon cinnamon (C. loureiroi) and Chinese cinnamon (C. cassia) are always sold as broken pieces of thick bark, as the bark is not supple enough to be rolled into quills. The 1600s, it turns out, were banner years for cinnamon.

Sprinkle it on top or fold it into your fruit filling for easy, delicious flavor. Half the time, I wind up with sticks that are so stale they just crumble and splinter apart when I try to grate them. Moreover, much of the cinnamon sold in grocery stores and supermarkets is, like much that you can find among mass-marketed brand items, a mystery food. Likewise, cinnamon that is stored for long periods of time prior to distribution can also be degraded and lose nutritional value. So, for those of us who are just using cinnamon as a spice, this nutritional difference is moot. Nevertheless, you’d have to be taking large amounts of cinnamon to even notice the difference between the coagulant cinnamon and the anti-coagulant cinnamon in a normal, healthy individual.
In modern times, growing poppy seeds is a difficult business for American farmers, due to the risk of heroin production. Other countries have fewer difficulties with permitting the growth of poppies for the seeds alone, which have very low levels of opium alkaloids, such as morphine. As other countries began imitating the American muffin, the occasional use of poppy seeds to flavor them spread as well. Because of this, all poppyseed pastries place the person who consumes them prior to a test at a high risk of being inaccurately considered a drug user. In traditional European cuisine, nutmeg and mace are used especially in potato and spinach dishes and in processed meat products; they are also used in soups, sauces, and baked goods.

Most reported cases of stomatitis from cinnamon are from toothpaste and gum. Symptoms of contact dermatitis are less severe than a true allergy, typically presenting as a rash that looks like a sunburn with redness, peeling, and itching. Avoiding cinnamon and cinnamon-containing products is the best way to treat this rash. Ingesting an allergen like cinnamon is a common way for an allergic reaction to happen. However, other non-life-threatening reactions can occur that still require a thorough evaluation. If you're allergic to cinnamon, ingesting, breathing in, or touching the spice may trigger an allergic reaction.
Another way coumarin may hinder your health is by promoting the growth of cancerous cells. Exactly how this happens isn't well known, but it's something that has been noticed in rodent experiments. This and means that cinnamon has an entire host of antioxidants to help boost your immune system, and also keep your body in top shape.
