Pai Cow, a small white cow-like creature, lives in the highlands of southern China. Pai, which means white in Chinese, is her original name. The literal meaning of her name is low. The name is commonly used in English to denote milk or curds.

There are no records of how these little cows became such popular among the Chinese people. However, there is one interesting legend behind the origin of the Pai cow. It is mentioned in several ancient Chinese classics such as the Yin Yang tale (the history of four seasons in Ancient China), the Yu Dynasty historical book, and the Song dynasty literature book. According to legend, these small white cattle were sent by God as a sign of goodwill to teach the people about agriculture.

These days, farmers in southern China's Yunnan province raise pai cows as a part of their cattle breeding business. According to some reports, the animals can live up to four more years. They have been found to be free of disease and free from any congenital defects. Their name is a mystery. They are sometimes called the Little White Buffalo, Silver Buffalo, or any other name they choose. From early spring to late summer, this is the best time to breed them. Their meat is delicious and healthy. It is also very tender.
